Instant Pot Chicken Ramen in a bowl

Sauté
 1 tbsp Vegetable Oil
 1 cup Shredded Carrots
 1 Green Onion
 1 tsp Grated Ginger
 2 Garlic Cloves, minced
After Sautéing Add:
 4 cups Chicken Stock
 ¼ cup Soy Sauce
 ¼ cup Peanut Butter
 2 tbsp Fish Sauce
 2 tbsp Honey
 1 cup Mushrooms
 2 Chicken Thighs, Bone-in/Skin-on
After Pressure Cooking Add:
 13.66 fl oz Coconut Cream (1 Can)
 2 Ramen Noodle Packs
 2 cups Spinach(I do a big handful!)
 ½ Lime, juiced
Garnish (optional)
 1 Lime Wedge
 Green Onion
 Cilantro
Sauté (optional)

Turn on sauté low (press the adjust button or the sauté button repeatedly to change the temperature depending on your model) and add the vegetable oil, green onion, and carrots.

When the aroma starts filling your kitchen add the ginger and garlic.

After Sautéing Add:

You can leave sauté on and use about half a cup of chicken stock to deglaze your pot. Once you scrape all of the little burned bits off the bottom of the pot add the rest of the chicken stock.

Add the soy sauce, peanut butter, fish sauce, honey, mushrooms, and chicken thighs.

Pressure Cook

Pressure Cook for 20 minutes. When it's done you can quick-release the pressure.

After Pressure Cooking

When the pin drops after quick-releasing, you can open the lid and remove the chicken. Remove the skin/bone, dice, and add back to the Instant Pot.

Add the coconut cream, noodles, lime, and spinach.

Garnish

Garnish with a lime wedge, cilantro, and more green onion.
