Simple Sweet Potato Risotto in the Instant Pot

I learned how to make risotto in one of my culinary classes in college and since then it’s always been one of those fancy dishes I only had on special occasions. That is until I learned that you can make it in the Instant Pot with about 5 minutes of “active cooking” time. Now I keep the ingredients on hand and eat it whenever I want to, thank you Instant Pot!

The Process

Start by turning on saute mode normal and add 2 Tbsp of butter and 1/2 an onion, diced.

When the onions start to brown, add 1 tsp of garlic and 1 cup of cubed sweet potato. I use frozen but raw is fine to use as well! Add 1 cup of arborio rice and remember this rice should not be rinsed! You can wait a few minutes and let the rice toast for some extra flavor, or if you’re in a hurry like I usually am, skip that step and go straight to adding the chicken stock. Add 2 cups of chicken stock or broth and use that liquid to deglaze your pot.

Now close the lid and pressure cook for 6 minutes. When it’s done you can quick release (manually release the pressure all at once).

When the pressure has been released, open the lid. You will notice some standing liquid. Give it a good stir and add 1/2 cup of parmesan; it will come together perfectly! Add salt and pepper to taste and enjoy!

FAQ

Why shouldn’t I rinse arborio rice when making risotto?

Rinsing arborio rice would remove the starches that make risotto thick and creamy.

I only have raw sweet potato, can I use that instead of frozen?

Definitely! Just make sure to peel it and cut it into cubes.

Can I add wine to this risotto?

You can! I would use about 1/4 cup of white wine to deglaze the pot and cook off the alcohol before adding the chicken stock and pressure cooking.

What goes well with Sweet Potato Risotto?

I usually make this as a side dish for Fish or Chicken. It’s also not uncommon to add a protein to risotto and make it its own dish!

Before Pressure Cooking

 ½ Yellow Onion, diced
 1 tsp Garlic, minced
 1 cup Frozen Sweet Potato, Cubed
 1 cup Arborio Rice
 2 cups Chicken Stock or Broth
After Pressure Cooking
 ½ cup Parmesan, shredded
 Salt and Pepper to Taste

DEGLAZE the pot using 2 cups of chicken stock or broth. (Scrape the bottom with a wooden spoon)

PRESSURE COOK for 6 minutes. When it's done you can QUICK RELEASE by manually releasing the pressure.
