This recipe is one of the easiest in my recipe book and my favorite thing about it is that it’s pot-in-pot with the rice cooked at the same time! It’s perfect for days when you don’t want to spend more than 10 minutes in the kitchen but want to serve your family and yourself a well-balanced meal.

The Process
1. Add Beef
We’re going to start by adding the beef broth and soy sauce to the inner pot. Next, add the beef chuck cut into bite-size pieces.


2. Add Ingredients and Rice
Now we’re going to add 1 tbsp of minced garlic, 3 tbsp of brown sugar, and 2 tsp of ginger to the beef. Add your rice on top of the beef. I used a silicone dish, rinsed 1.5 cups of rice, and added 1.5 cups of water.



3. Pressure Cook and Release
Pressure cook for 13 minutes and let it natural-release (about 15 minutes). I normally cook long grain rice for 4 minutes directly in the inner pot but since it’s sitting away from the heat source in a separate dish, 13 minutes is necessary!

4. Thicken and Add Broccoli
Remove the rice dish, turn on sauté mode and add toasted sesame oil, cornstarch in a slurry (mixed with water), and a pound of broccoli florets. Turn off sauté and set to keep warm. Put the lid back on while the broccoli softens for 5-10 minutes.



5. Enjoy!
Serve the beef and broccoli atop the rice and praise the Instant Pot gods that you were able to get some much-needed rest (or catch-up time) while your dinner cooked, then throw those few dishes in the dishwasher and call it a day!

FAQ
Do I need to cook this with rice or can I just make the beef and broccoli?
You definitely don’t need to make the rice. If you don’t add the rice or don’t have the silicone bowl you can quick-release it after 5 minutes instead of waiting for it to natural-release.
What other sides can I make for beef and broccoli besides white rice?

I don’t have fresh ginger, can I use ground ginger?
Fresh ginger really gives this meal a bright flavor, but you can use ground if need be. Use 1 tsp in place of fresh ginger. I like to keep fresh ginger in my freezer at all times because it ALWAYS goes bad in my fridge before I can use the whole thing. I freeze it whole and cut/peel/grate as I need it but you could also grate it all at once and freeze it in ice cube trays or Souper Cubes!
Can I use frozen broccoli instead of fresh?
Of course! If I were you I’d steam it in the microwave and then add it to the beef and broccoli. If you don’t want to do that go ahead and add it directly to the Instant Pot according to the recipe but know that it may release more liquid than if it were fresh. You may want to sauté longer or add more cornstarch slurry to make up for that.
Can I freeze this beef and broccoli after cooking?
Definitely! The broccoli won’t be as crisp and bright as the first time you make it but it’s still delicious. If you want the broccoli to be fresher you could also add broccoli when you reheat it instead of adding it when you cook it the first time. Eat within 3 months for the best flavor!

When all the pressure has released, open the lid and set the rice aside. Turn on saute mode and add the sesame oil, and cornstarch slurry.
Turn off saute, add the broccoli florets, and put the lid back on for 5-10 minutes until the broccoli is softened to your liking. Plate the broccoli beef over the rice and enjoy!
