Ingredients

  • Oil
  • Chicken Breast
  • Italian Seasoning
  • Salt/Pepper
  • Yellow Onion
  • Garlic
  • Red Wine
  • Sun Dried Tomatoes
  • Cream- I prefer using coconut cream!
  • Spinach

The Process

1. Saute Chicken

Start by turning on Sauté Medium/Normal and adding two tablespoons of the oil from the sun-dried tomato jar. While that’s heating up season your chicken breast with Salt and Pepper. Add the chicken to the pot and brown both sides for a few minutes. When it’s done, set aside and sauté the onion for a few minutes before adding the garlic.

2. Deglaze

About 30 seconds after adding the garlic, pour in the red wine and use it to deglaze the pot (scrape off the browned bits on the bottom of the pot). Turn off sauté and add the sun-dried tomatoes, Italian Seasoning, pepper and the chicken back to the pot.

3. Pressure Cook and Release

Pressure cook for 10 minutes and natural-release the pressure for 5 minutes before quick-releasing.

4. Add Cream

Remove the lid and set the chicken aside. Press cancel and turn on sauté LOW. Pour in your choice of cream and about 2 cups of spinach. Turn off sauté and add your chicken back in.

5. Enjoy!

Close the lid, make sure it's in the sealing position and press "pressure cook" or "manual" (depending on your model) and set it to cook for 10 minutes.
