The Process

1. Saute

First, turn on saute mode, normal, and add the butter and onion. After a few minutes add the garlic and the canned diced tomatoes with the juice! Deglaze the pot with the tomatoes and turn off saute.

2. Add Ingredients

Add the strained black beans, adobo sauce, green chiles, paprika, pepper, chili powder, cumin, chicken broth, chicken, and water!

3. Pressure Cook and Release

Pressure cook for 10 minutes and let the pressure cooker naturally release.

4. Add MORE Ingredients!

Remove the lid and take out the chicken, remove the skin and bones, shred and add back to the pot. Next, strain and add the can of corn.

5. Serve and Garnish!

You CANNOT skimp on the garnish with this Instant Pot Chicken Tortilla Soup! Add tortilla strips or chips, lime, cilantro, avocado, sour cream, and your choice of cheese. I like Cojita or cheddar cheese!

FAQ

How long do I need to saute?

It should only take 5-10 minutes to saute the onions before adding the garlic. Once you add the garlic, wait a minute and then add the tomatoes, deglaze and turn off saute mode!

What are other toppings I can add to this Instant Pot Chicken Tortilla Soup?

I ALWAYS add avocado, tortilla strips or chips, sour cream, lime, cilantro, and cheese. You can also add red onions, black olives, jalapenos, fresh tomatoes, salsa, hot sauce, or even pre-cooked rice!
