When I made this video, Rotel Dip was trending on TikTok so, of course, every time I’d see a video I would think about how much easier it would be to make in the Instant Pot. You don’t need to cook the ground beef separately, it’s already in a warming pot that can be easily transferred to a party, and (last but definitely not least) it’s WAY faster than using a slow cooker.

The Process
Start by chopping a yellow onion and adding it to the Instant Pot as the first layer. Next, add the ground beef (90% fat or more so there’s not a lot of grease) and break it up atop the onions.


Next comes the seasoning, we’re using one packet of Old El Paso Hot and Spicy Taco Seasoning Mix and a tsp of Morton Season All. Next, add a can of mild Rotel and a block of Velveeta cheese.


Close the lid and pressure cook for 10 minutes. While it’s pressure cooking out the cream cheese on the metal part of the lid, this will warm it up and make it easy to incorporate! (Thanks @hey_judith on TikTok for this hack!) When it’s done you can quick-release the pressure.



Once all the pressure is released go ahead and open the lid and add the cream cheese, drained can of corn, and 3 cups of Mexican-style cheese.


For pretties, I put the dip into a dish and added some more Rotel on top but if you’re keeping it in the Instant Pot just set it to keep warm and it will stay warm while you party!
FAQ
There is no more liquid to add besides the tomatoes?
Nope! I’ve tested this recipe many times and have never gotten the burn signal or had trouble coming to pressure. There is enough liquid from the onion and tomato!
I can’t find Rotel at my grocery store, what can I use instead?
No worries, you can use a can of diced tomato and a can of chopped green chiles in place of Rotel.
I want to substitute x ingredient for y ingredient. Is that ok?
Since this recipe is directly in the pot and doesn’t contain a lot of liquid I can’t say whether swapping ingredients will work or not. I’ve only tested this recipe with these ingredients/amounts. Feel free to try it yourself or leave a comment and I’ll give you my best advice!
How can I make this less spicy?
Go ahead and swap out the spicy taco seasoning for a less spicy version. If you want even less spice you can swap out the Rotel for a can of diced tomatoes!
