If I could only eat one thing for the rest of my life it would be sushi. Unfortunately, sushi is expensive so to avoid going out I like to make sushi or poke bowls at home! This Instant Pot Sushi Rice is a quick and easy way to uplevel your dinner with only a few ingredients!

The Process
Ingredients:
- Water
- Sushi Rice
- Rice Vinegar
- White Sugar
- Salt
1. Add Rice, Rinse, and Strain
Measure and add your rice to the Instant Pot inner pot. You can use as much rice as you’d like as long as it and the water you add later doesn’t go above the halfway line. Now rinse the rice with water and strain it using your hand or a sieve.




2. Add Water and Pressure Cook
Next add the same amount of water as rice, a 1:1 ratio. Pressure cook using the low pressure setting for 10 minutes, then let it natural-release for 10 minutes. Cooking a cup of rice allowed it to natural-release on its own in 7 minutes. Make sure that you are using at least the minimum amount of water for the size of your Instant Pot. For a 6 quart it’s 1 cup, for an 8 quart it’s 2 cups so you would also need 2 cups of rice.



3. Add Ingredients
Now add the rice vinegar, white sugar, and salt. Mix and Enjoy!
A quick tip: Sushi rice shouldn’t be very moist or it won’t stick very well. If it seems moist you can lay it out on a wooden cutting board to evaporate a bit, or just leave it in the Instant Pot for 5-10 minutes uncovered to allow it to evaporate.

Why do I need to rinse the rice?
Rinsing the rice washes away the starches and adds just the right amount of water to make the perfect consistency!

I used a 6-Quart Duo Plus Instant Pot for the pictures in this blog post but I usually use a 3-Quart Duo Instant Pot for rice!
